lancaster Brewing
Blessed with fresh country air, pure water, and arguably the richest non-irrigated farmland in the world, Lancaster is a place where a handshake still carries weight. It is also a community where genuine craftsmanship, artisan quality, and stubborn self-reliance continue to shape daily life.
At Lancaster Brewing, we build on these values by combining our obsessive commitment to quality ingredients with creativity, skill, and experience. As a result, we consistently brew great-tasting, approachable ales and lagers. Furthermore, drawing inspiration from over 300 years of local brewing tradition, we take pride in brewing right in the heart of Lancaster County. Here, we stand alongside old-world craftsmen, farmers tending more than 5,300 independent local farms, and our fiercely independent Amish neighbors—each contributing to the legacy we proudly uphold.
BREWING HISTORY
Bringing Lancaster’s Brewing Legacy Back to Life
When we brewed Lancaster’s first commercial beer in nearly 40 years, we didn’t just fire up the kettles—we reignited a legendary brewing tradition. And honestly, we couldn’t be prouder of the role Lancaster Brewing Company has played in reviving the bold, flavorful spirit of this beer-loving town.
Brewing in Lancaster goes way back—like powdered wigs and horse-drawn wagons back. It started in the early 1700s with British settlers crafting hearty ales in the back rooms of inns and taverns. Then came the Germans (with great timing and even better beer), introducing crisp, clean lagers that helped put Lancaster on the brewing map. By 1810, this little corner of Pennsylvania was cranking out over 200,000 barrels a year—more than 7% of all beer brewed in the U.S. Even legendary writer and beer fan Henry L. Mencken took note, calling Lancaster “the Munich of America.” High praise? You bet.
But then came World War I, and with it, a one-two punch: coal restrictions and Prohibition. Lancaster’s 14 thriving breweries were forced to go dark—officially, at least. Unofficially? Let’s just say creativity flowed as freely as the underground beer lines. In 1932, a city worker even found a hose in the sewer connecting Rieker Brewery to a secret keg operation. That’s Lancaster grit for you.
Prohibition ended in 1933, and brewing returned. But the rise of big, automated breweries out west eventually took its toll. By 1956, the last of Lancaster’s commercial beer had been brewed—and for nearly four decades, the taps ran dry.
That is, until we opened our doors in the historic Edward McGovern Tobacco Building at 302 N. Plum Street. Today, the Keares Family still brews right here in this iconic red-brick building. Not only does it stand as a symbol of the beers we proudly craft every day—it’s also a full-bodied toast to Lancaster’s bold brewing past.
BREWING PROCESS

Brewing Since ’95 innovating every day
the GRAIN
We use superior quality, non-gmo grains, including 2 row barley base malt, along with an array of the finest specialty grains from around the world to brew approachable, well-balanced, flavorful beers.
the HOPS
Hops are much like the spices in a Chef’s cooking… when to add, how much and how long to infuse them is an art. We source the freshest, highest grade hops from the Pacific Northwest, Europe and even a few local growers to give our beers exceptional aroma and flavor.
the YEAST
Utilizing proper yeasts for the perfect flavor profile is a science. Yeast strains allow us to control the subtle taste profiles to deliver clean tasting lagers, funky ales, aromatic saisons, tropical fruit forward hazy IPA’s and complex barrel aged creations.
the WATER
The main ingredient in beer, we’re fortunate to have pure water with an excellent mineral profile for brewing. Our state of the art filtration system insures great taste and prevents any contaminants from entering the brewing process.
BUILT ON GREEN INFRASTRUCTURE
In conjunction with the City of Lancaster’s Green Infrastructure plan, we have transformed our south facing exterior into a stormwater collection zone. Rain gardens, a patio with permeable pavers and a 750 gallon, 35’ tall cistern all help to prevent millions of gallons of stormwater runoff from flowing into our local waterways, and ultimately the Chesapeake Bay. Our cistern, titled “The Lancaster Gateway Bundle” is a public artwork created by Austin+Mergold, that conceptualizes a grain silo, paying homage to Lancaster’s brewing culture and agricultural roots.
ENERGY SUSTAINABLE BREWING
We’ve partnered with GREENCROWN® Energy to secure Renewable Energy Certificates (RECs) that account for each unit (MWh) of power we use here at the brewery. These credits support wind powered electricity production, so you can rest assured that every great meal along with every Lancaster Brewing Company brew you know and love is produced with 100% renewable energy.
